I don't know if anyone else is having this problem but I find in my attempt to make things personal and pay attention to little details I may have gone a little overboard. At some point its going to be too much but how exactly do you decide what is too much. For example, I found on For Your Party pretty reasonably priced custom cocktail napkins, awesome! I also found an idea to make custom little drink flags for the drinks, awesome! I also really, really want custom flags for our cupcakes, awesome! I want to make pretty little signs (MS style) for all the food and dessert since we are having stations and not a sit down meal, awesome! I want to have a trolley to shuttle guests that is green so that it matches the wedding colors, awesome! OK I am sure you get my point by now. So my guess is after awhile when it is all said and done these things are going to look crazy! How do you choose what to keep and what not to keep, how do you know when enough is enough?

Keep in mind...you're not being to serving your decorative drinks and food with matching tags on the green trolley. This stuff will be scattered throughout the event. However, you could end up making yourself crazy. Maybe you should decide what would be the HARDEST thing to locate or complete and choose to focus on that and bag the other things or vice versa. And I doubt that 70 percent of the guest would notice that the trolley was intentionally green. All of the ideas that you mentioned in your post sound Martha Stewart-worthy. I wouldn't sacrifice any of these things for fear of it being too much. Except for the trolley, they are all very small things.
i think that some of these small things like drink swizzle sticks and cupcake flags are really nice details that at the time will show that you were thoughtful... and i love personalized napkins :)
as Tina mentions- these details are spread out and will not seem crazy...
i would say that if they are All DIY- it could make you crazy to coordinate... so do whichever ones you love!
